Ingredients

    1 Cup of Uncle Ben's Converted Long Grain White Rice
    2 Cups of Chicken Broth, low sodium or no salt
    2 tbls Butter, unsalted
    2 tbls Extra Virgin Olive Oil
    1 tsp Garlic Salt
    1/4 cup Peanuts, Dry Roasted or unsalted, Chopped

Directions

Preheat oven to 350". In a saucepan, bring chicken broth, butter, olive oil and garlic salt to a boil. While this is on, grease a 2 qt. casserole. Rinse the rice in cold water. Place rice in casserole dish. Pour boiling mixture over rice. Sprinkle with peanuts. Cover and bake till all liquid is absorbed . Makes 4 1-cup servings
