Introduction

Delicious easy to make carrot cake that is totally vegan, no animal products used but you cannot tell! Delicious easy to make carrot cake that is totally vegan, no animal products used but you cannot tell!
Number of Servings: 12

Ingredients

    2 cups all purpose flour
    1 cup sugar
    1 tsp salt
    2 tsp baking soda
    1 Tbsp Cinnamon
    1 tsp ginger
    1/2 tsp nutmeg
    1 Tbsp Vanilla extract
    1/2 cup canola oil
    6 Tbsp white vinegar
    1 cup water
    2 cups grated carrots*
    1/2 cup seedless raisens
    1 cup chopped walnuts

Directions

Preheat overn to 400 degrees F. Mix dry ingredients in a medium sized bowl. Make a well in the center and add wet ingredients. Mix well and add carrots and walnuts fold in until well bended. It is ok if there are small lumps, DO NOT use electric mixer or over mix. Spray a non stick bundt pan with cooking spray generously, add batter and cook for approx. 45 to 50 minutes. Let cool in the pan for 10 minutes and then remove to cake plate and let cool. Top with glaze if desired. (see kay's easy cake glaze recipe)
Makes 12 - 2 inch servings.
