Introduction

Ingredients

    1.25 cup of bran (crude) it looks like brown tiny flakes
    0.75 cup of whole meal flour
    7 splenda no calorie sachets
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    1 (4 oz) container of skim milk yogurt (approx. 110 gms)
    0.5 cup skimmed milk
    2 medium sized apples (peeled, cored & grated)
    2 tsp instant coffee dissolved in 0.25 cup of water
    4 tsp ground cinnamon
    1.5 tsp sugar free pure vanilla extract
    2 tbsp unsweetened applesauce


Directions

mix all the dry ingredients in a bowl then all the wet ingredients in another bowl (including the instant coffee dissolved in some water) & grate the apples with 1 tsp cinnamon (in a blender) in a third separate bowl. mix the dry + wet + fold in the grated apples & grease the muffin tin (or the paper cups) with a cooking spray of ur choice. Preheat oven at 400 F or 200 c for 5 minutes then bake for 20 minutes in the middle of your oven & set aside to cool down completely. Makes 16 medium sized servings.
Tip: the muffins will not stick to parchment paper cups. Hope u like it :)

    I assume that 'Whole meal' is Whole Wheat. Chefs need to start 'speaking English', so to speak. ;-) I hate when they use the term 'crudities' instead of just 'assorted cut vegetables'. - 12/1/10
