Introduction

Number of Servings: 8

Ingredients

    2 10-oz packages frozen cauliflower
    1 10 3/4 oz can condensed cream of celery soup
    1 4oz can mushroom stems and pieces, drained
    1/4 cup sliced green onion
    1/2 tsp dried basil, crushed
    1/4 tsp salt
    Dash of pepper
    1/4 cup grated Parmesan cheese
    1/2 tsp paprika

Directions

Preheat oven to 375. Cook cauliflower according to package directions, drain. Halve any large pieces. In a 2 quart casserole dish, combine soup, mushrooms, onion, basil, salt, and pepper. Stir in cauliflower. Sprinkle Parmesan cheese and paprika on top. Bake, uncovered, for 25 minutes or until heated through. Makes 8 servings.

I have also made this as a main meal, and rolled half of the mixture into tortillas, and pouring the other half on top, and baking it according to the directions.

    I was amazed by how good this was and it was a combination of two of my least favorite foods...cooked cauliflower and mushrooms. Great for healthy eating. - 1/6/08
