Introduction

Ingredients

    1/4 chopped, medium red onion
    6 oz (approximately 24) chopped grape tomatoes
    1/2 chopped red pepper
    1/2 chopped, peeled, small cucumber
    1 tbsp Lime juice
    1 tbsp Olive Oil
    1 tsp low sodium soy sauce
    pinch of dry basil (to taste)

Directions

Chop and combine all of the ingredients. I let sit overnight so that the flavors could mix well together.

Makes approx 4 1/2 cup servings
