Introduction

Ingredients

    1.5 bell peppers-chopped (any color or a mix)
    1 medium onion-chopped
    28 oz can of diced tomato
    4 oz fresh sliced mushrooms
    14 oz Gimme Lean Soy Sausage (a little more than 1/2 the roll)
    2 cans of Healthy request cream of mushroom soup
    1 tbsp of olive oil
    2 oz. Sherry (optional)
    2 tbsp of Worcestershire Sauce (vegetarian)
    1.25 cup dry brown rice
    Spice to taste (Salt, Pepper, Garlic, Oregano, Rosemary)

Directions

Bring tomatoes plus another 1/2 cup of water to a boil. Add rice, reduce heat and cover for the rice to simmer. In a large skillet, saute the onions, peppers, and mushrooms in olive oil until tender. Add the spices and soy sausage crumble and saute until they start to brown. Blend in cream of mushroom soup, sherry and worcestershire. If your skillet is large enough, add your rice and tomato mix to the skillet, stir, and continue cooking until rice is tender. Makes 4 servings (approx. 1.5 cups each, but I just divided the whole recipe into 4).
