Ingredients

    250g pasta
    1/2 tsp olive oil
    dash salt

    50g butter
    2 Tbsp plain flour
    1.5 cups nonfat milk
    1 tsp dijon mustard
    1/3 cup grated mild cheddar cheese
    1 Tbsp grated Parmesan
    250g frozen mixed vegetables
    1/4 cup dry breadcrumbs

Directions

Preheat oven to 180 degrees C. Boil the pasta in water with salt and oil added for 5 minutes, then add the frozen veg and cook for an extra 3 mins. While the pasta is cooking, melt the butter in a heavy-based saucepan and mix in the flour until it has soaked up the butter. Add milk one half cup at a time, stirring with a whisk until thickened. Turn down heat and add mustard and cheeses. Into a greased casserole dish, pour the pasta and veggies and stir in the cheese sauce. Sprinkle breadcrumbs over the top then bake for 20-30 minutes or until breadcrumbs start to brown. Makes 4 1-cup servings.
