Ingredients

1 cup chopped onions
8 cups chicken stock, low sodium
5 cups shredded cabbage, green
2 Cups potato flakes or 2 large potatoes, diced
10 oz diced leftover pork tenderloin (baked)
1/4 tsp crushed dill weed
1 TBL cider vinegar
black pepper
2 Tbl. dried parsley
2 tsp. habanero sauce
1/2 cup evaporated milk to thicken soup (opt)
1-2 cloves mashed garlic
Directions
Coat Soup pot with no-stick spray. Cook onions and garlic covered for 5 min. Uncover, cook over medium heat, stirring occasionally, for 3-4 min.
Add the stock, cabbage, potato flakes, pork cubes, and dill seed and dried parsley. Cover and bring almost to a boil.
Reduce heat to low and simmer for 15-20 min. Stir in vinegar and evaporated milk until the desired consistancy. Season to taste with pepper and salt and habenero or other hot sauce.
