Introduction

Ingredients

    Ingredients:
    oatmeal ground - natures choice organic, 20 gram
    white beans- compal, 100 gram(s)
    Baking Powder, 1tsp
    Cumin ground & Cumin seed, .5 tsp each
    Cardamom, ground, .5 tsp
    dash of cinnamon / chai spice
    Water, tap, .25 cup (8 fl oz) or until you acheive a crepe-like consisentcy
    xanthan gum - just a dash for binding as i ommited the eggs
    dash of liquid zero-calorie sweetner (own taste - omit if preffered)

Directions

right, well as i completely "winged" this recipe out of my head the advice i can give is as follows:
firstly, a hand blender will be handy....

1. blend/ mash white beans - i used canned as that was on hand, but i suppose you could use any form you prefer....
2. once beans are blende into a smooth paste (you might find you will need a dash of water to acheive a velvety texture)
3. mix your flour and baking powder along with your dash of salt and preffered mixture of spices (like mentioned before, you can play around here)**flour choice** i used oatmeal ground flour as it has a high fibre content, suppose you could use any other alternatives.... get creative.
4. mix your xanthan gum little less than 1/2tsp is sufficient. i use a 1:3 ratio here - set aside for a minute or so to let it congeal
5. add dry mixture to the beans and start blending - adding water as you go to get a smooth texture again. once you have acehived ypur velvety texture again add the xanthan gum and blend once again to let all the ingredients bind.
6. now, you need to acehive a 'crepe-like' texture/consistency - the best way to describe it is : if you lif a spoonful out and pour it back, the 'twirl' should remain on the top of the mixture for approx 3-4 seconds.
7. the size you want is completely up to you, i used a small frying pan (27cm) nonstick version
8. pre-heat the pan and spray with spray and cook
9. here is a slight technical part, because just like me, you might think at first that your mixture is a flop!..... once you add about two scoops into the pan (as you would with a pancake/crepe mix it wont be that runny and will start bubbling and look like there are holes averywhere - that is fine. once the mixture is in the pan, place the pan-lid or any lid that will fit on top. the steam here helps alot....let it cook until the edges brown and lift slightly. once the dough on top is firm-ish, lift from the sides and flip over.
the colour and hardness/crunchyness from here is completely up to you...
