Introduction

This is another really easy and super flavorful side dish. Use the precooked bacon because it's less greasy and easy to cook. This is another really easy and super flavorful side dish. Use the precooked bacon because it's less greasy and easy to cook.
Number of Servings: 2

Ingredients

    2 tsp Extra Virgin Olive Oil
    1/2 cup thinly sliced purple onion (I use a mandolin)
    2 cloves garlic chopped
    1 package of fresh spinach
    2 slices pre-cooked bacon
    1 Tablespoon crumbled blue cheese

Directions

heat oil in skillet and saute onions until the are soft and translucent (about 1 minute)
Add Garlic and saute for 30 seconds.
Add bag of spinach and saute until it wilts (about 2 minutes)
divide onto two plates and sprinkle with crumbled bacon and Feta.
Serve Warm.
