Number of Servings: 6

Ingredients

    1/2 c. (90 g) dry lentils (I used 3/4 green, 1/4 red)
    1/2 c. (92 g) dry brown basmati rice
    100 g. sweet onion, cooked until clear
    1 tbs each: sage, marjoram, savory, thyme
    fresh ground pepper and sea salt to taste

Directions

Cook your lentils until they are tender. Cook rice as you usually do. Spray pan with non-fat cooking spray and add onions, spices. Sauté onions until they are tender and clear. Partially mash the lentils. Mix lentils and rice in a large bowl, add onion mixture and stir well to blend. Press mixture into an oiled baking dish or loaf pan. Bake at 350 for 45 minutes to an hour, or until the edges brown slightly. Let sit for about 10 minutes before serving with vegan gravy and garlic mashed potatoes.
