Introduction

A quick to prepare but yummy main dish - especially good for parties as it looks good too! A quick to prepare but yummy main dish - especially good for parties as it looks good too!
Number of Servings: 1

Ingredients

    1 fillet flounder or other white fish
    1 tsp dijon mustard
    1 tbsp parmesan cheese, grated
    1/4c dry bread crumbs,
    1 tbsp butter or oil
    1/2 clove garlic, minced
    1/4 cup carrots, julienne
    1/4 cup leeks, julienne
    1/4 cup celery, julienne

Directions

1. Saute the carrots, leeks and celery until soft in 1 tsp butter.
2. Mix the remaining butter, crumbs, parmesan and garlic together.
3. Season the vegetables with salt and pepper and place them in the bottom of an oven proof dish
4. Place the fillet of fish on top of the veges
5. Spread mustard on the fish
6. Top with the crumb mixture
7. Bake at 350 F for about 10 - 15 minutes (depends on the size of the fish)

Serve with potatoes.
