Ingredients

    Chicken Breast, no skin, fried, 2 breast, bone and skin removed (remove)
    Jalapeno Peppers, 2 pepper (remove)
    Onions, raw, .5 medium (2-1/2" dia) (remove)
    Carrots, raw, .25 cup, grated (remove)
    Ginger Root, 2 tsp (remove)
    Garlic, 2 tsp (remove)
    Couscous, .75 cup, dry, yields (remove)
    Chicken Broth, 14 fl oz (remove)

Directions

Take chicken breast remove skin chop into small pieces. Finely dice onions and jalapenos. Grate carrots, garlic,and ginger, set aside. Use olive oil to sautee onions and jalapenos. Then add cooked chicken garlic, carrots, and ginger. Sautee for about 3 minutes. add 3/4 cups chicken broth and let cook down. Add pepper, curry powder and other seasonings at this time let come to a boil. And reduce heat let sauce reduce to your liking.

Take 1 cup of broth bring to a boil. Add plain instant couscous. Stir and remove from heat. Let stand 5 minutes. Fluff with fork. Serve under chicken mixture
