Ingredients

1 can sweet corn, drained and rinsed
1 can black beans, drained and rinsed
.5 cup red onion, diced
2 tbl fresh cilantro, chopped
2 tbl lime juice
Directions
Rinse and drain the corn and beans. In a large bowl mix the corn and beans together.
Chop about one quarter of a red onion and one medium tomato into small pieces. Adjust the amount of onions based on your personal preference. Too many and the onions overwhelm the dish.
Add onion and tomato to the corn and bean mixture.
Chop the cilantro and add it and the lime juice to the mixture. Refrigerate the mixture for about 30 minutes to allow the flavors to marinate. Serve and enjoy.
