Number of Servings: 10

Ingredients

    3 cups Vegetable Broth
    1 Tbsp chili powder
    1 tsp ground cumin
    1 can (about 16 oz) black beans, rinsed and drained
    1 can (about 16 oz) chickpeas, rinsed and drained
    1 can (about 16 oz) cannellini beans, rinsed and drained
    1/2 cup dried lentils
    1 can (about 16 oz) Muir Glen Chipotle diced tomatoes (or 1 can regular diced tomatoes plus chipotle seasoning)
    chopped fresh cilantro leaves

Directions

1. Mix all ingredients except cilantro in slow cooker. Cover and cook on High 4 - 5 ours or on Low for 6 - 7 hours or until lentils are tender. Add more vegetable broth if needed to maintain a thick soup consistency.
2. Sprinkle with cilantro when served.

Makes 10 1-cup servings
