Ingredients

4 cups prepared whole wheat speghetti.
1 Tbs. Olive oil
1 large boneless, skinless Chicken breast.
1/2 medium onion
2 cloves of garlic, pressed.
1 cup chopped broccoli
Feta-fredo sauce:
1 cup non-fat milk
2 Tbs. flour
3/4 cup feta cheese
2 Tbs. Parmesan Cheese (grated)
Garnish:
1 cup diced fresh tomatoes (1/4 cup on each plate.)
light sprinkle of parmesan.
light Sprinkle of basil or parsley.
Directions
Cut the chicken into cubes, fry in the olive oil with the onion and garlic. Once the chicken is nice and white, throw in the broccoli and cook 'til the broccoli is tender.
Put the milk in a small pan and whisk in the flour, cook over medium heat 'til it begins to thicken. Stir in the feta and parmesan, cook 'til thick and the cheeses are melted.
Pour the sauce into the chicken mixture and pour over your noodles. Garnish with diced tomatoes, sprinkle of parm, sprinkle of basil, and tomatoe wedges. (if you want to get fancy)
Some other yummy additions; grilled mushrooms or black olives. (or both)
