with Dijon with Dijon

    Two tablespoons extra virgin olive oil
    One onion, diced
    One carrot, chopped
    One celery stalk chopped
    1/2 a head of cauliflower, chopped
    stalk of broccoli, chopped
    A couple of tablespoons of Dijob mustard
    Chicken Stock


Sautee onion, carrot and celery in oil over medium heat until onion is translucent. Add remailing ingredients, cover with chicken stock (add water if necessary) and simmer for half an hour or until veggies are soft.
Blend using an immersion blender.
Makes 8 servings.
