Ingredients

    Olive Oil, 1 tbsp
    Carrots, diced , 1.5 cup
    Celery, diced, 1 cup
    Onions, diced, 1 cup, chopped
    5 Garlic cloves, minced
    Dried lentils, rinsed 2 cups
    1 14 oz. can of no sodium added diced tomatoes
    Fat-free, low sodium chicken broth, 4.5 cups
    7 oz. Hillshire Farms cooked Turkey Kielbasa, diced

Directions

Heat the olive oil over medium heat in a large pot. Add vegetables and saute until just cooked through (about 5 minutes).

Add rinsed lentils, diced tomatoes and chicken broth. Bring to a boil, then reduce heat to simmer and cover pot. Cook approximately 30 minutes, or until lentils are cooked through.

Add diced kielbasa and cook 15 minutes longer. Add salt and pepper to taste.
