Ingredients

    1 lb sliced bacon
    1 med sweet onion chopped
    6 eggs, lightly beaten
    4 cups frozen shredded hash brown potatoes, thawed
    3 cups shredded cheddar cheese
    1 1/2 cups small curd cottage cheese
    1/4 cup shredded swiss cheese

Directions

Cook bacon, drain and roughly chop. Put in large bowl and add remaining ingredients. Transfer to 13 x 9 x 2 inch greased baking dish. Can be made ahead an put in refridgerator over night.

Bake in 350 degree oven for 35 - 40 minutes. Let stand for 10 minutes before cutting. Left overs are great warmed up for a minute in the microwave.

    We also love this recipe and usually make it for dinner (leftovers are great for breakfast the next morning!). I like to use pre-cooked bacon--crisp it up in a skillet, then saute the onions (I add green pepper) in the grease left in the skillet. I add salt and pepper also. - 10/19/12
