Introduction

We modified this to cut back on the dairy. You can use 7 cups 2% milk instead of soy and rice milk. We modified this to cut back on the dairy. You can use 7 cups 2% milk instead of soy and rice milk.

Ingredients

    3 cups brown rice
    4 cups soy milk
    3 cups rice milk
    8 Tbl (1 stick) butter
    1 can Cream of Chicken soup
    3 Tbl Better than Broth - chicken
    4-5 cups diced cooked chicken
    salt/pepper

Directions

Mix cooked chicken with all other ingredients. We use chicken meat from whole chicken that was cooked for broth. Put in a greased, 9x13 baking dish. Cook at 350 for 2 hours.

Makes about 10 1-cup servings.
