Ingredients

    cooking spray
    2 large eggs
    1 C. milk
    1/4 C. vegatable oil
    1 1/2 C. yellow cornmeal
    1 C. all-purpose flour
    1/4 C. sugar
    2 1/4 tsp. baking powder
    3/4 tsp. salt
    1 bundle asparagus spears (about 12)

Directions

Spray an 8x8 or 9x9 baking pan with cooking spray. Set aside.Wash asparagus and snap off bottom ends where naturally breaks. Set aside. Beat eggs in a medium bowl. Stir in remaining ingredients until smooth. Batter should be creamy and pourable; an additional 1-2 tbs. milk may be added to thin, if necessary. Pour half the batter into prepared pan. Lay asparagus in a tight row across the batter-filled pan, alternating the tips from side to opposite side. Cover asparagus with remaining batter, covering the spears completely. Bake in a 450F oven until golden brown. Makes 6-8 servings.
