Ingredients

    1 1/2 cup brown rice
    2 talb parsley-dried
    1 tesp. olive oil
    1/3 onion chopped
    1 cup butternut sqash cubed
    1 granny smith apple cubed
    1 tesp.dried thyme
    1/2 cup vegetable broth
    14 walnut halfs

Directions

Heat oil and saute onion-add squash,apple and thyme-then add broth -heat for 5 minutes. Mix cooked rice with the other ingredients and bake 425 for about 20-25 minutes.This serves 3
