Introduction

It's Basically just some beans and veggies, heated up with a little cumin and red pepper cooked in beef stalk. It's very easy and quick, simple, yet delicious, and not to mention chunky! Ingredients

    -4 cups beef stock (I used kitchen basics, reduced sodium, 1 whole carton)
    -3 1/2 cups black beans, canned.
    - 2 tsp extra virgin olive oil
    - 1 tbsp chopped fresh chives
    - 1 medium yellow onion, chopped or cut into strips
    - 2 tsp cumin
    - 1 tsp red pepper
    - about 1/8 head of green cabbage, chopped (or i just rip it)
    - 1 med green bell pepper, chopped.
    - 1 1/2 tbsp garlic


Directions

-Put olive oil, onion, and garlic into bottom of Pot and sautee just until garlic begins to brown a little and onion gets soft.
-Pour in all of the beef stock
-Add all ingredients and stir well
- When the soup reaches just a boil, turn on low and simmer, covered, for about 20-30 minutes or until desired tenderness/taste
