d=1134076, this meatloaf has offered a good solution to the dilemma in our household: my husband LOVES meatloaf, and I've always hated it. This slightly smoky/spicy moist meatloaf still has texture, which was always my meatloaf complaint, and GREAT flavor! He even said it was "outstanding with a little zip" in sandwich form. Ingredients

Meat loaf:
1-2 Chipotle chiles in adobo sauce (from 7 oz can)
1/2 cup finely chopped onion
1/2 cup grated zucchini
1/2 cup coarsely chopped fresh cilantro
1/4 cup old-fashioned oatmeal
1/4 cup dry breadcrumbs (I ended up putting some Low Sodium Ezekiel Sprouted Grain bread in my food processor because I couldn't find whole wheat breadcrumbs)
1/4 cup no-salt-added tomato sauce
2 teaspoons dried parsley
1/2 - 3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon freshly ground black pepper
3 garlic cloves, minced
2 large egg whites
2 pounds ground turkey
Topping:
1/4 cup no-salt-added tomato sauce
1 tablespoon ketchup
1/2 teaspoon hot sauce
Directions
Remove and chop chile(s) from can. Combine chile(s), onion, zucchini and remaining meatloaf ingredients (not topping ingredients) in a large bowl, stirring to combine. Place turkey mixture in a 9 x 5-inch loaf pan coated with cooking spray. Bake, uncovered, at 350° for 30 minutes (only took ~15-20 minutes in my mini-scone pan).
To prepare topping, combine 1/4 cup tomato sauce, ketchup, and hot sauce in a small bowl; brush mixture evenly over meat loaf. Cover and bake an additional 30 minutes or until thermometer registers 160° (again, only took ~10-15 minutes on my mini-scone pan). Let stand 10 minutes before slicing.
(I made these in my mini scone pan, which pops out 16 mini-scone sized meatloaves. Nutritional info calculated as 1/16 of recipe = 1 serving.)
