Introduction

This is an omlette to die for! When I first tried it I did not think I would like it but I did like it. If you like smoked salmon you will like this! This is an omlette to die for! When I first tried it I did not think I would like it but I did like it. If you like smoked salmon you will like this!

Ingredients

    Put one teaspoon of olive oil in your omlette pan. Turn on your stove to medium heat or a little less. You want this to cook slow so the salmon will heat up. Breakup all your salmon into crumbly pieces set aside. Next take 3 or 4 fresh basil leaves and roll them up together real tight. Take your knife and cut at a angle starting at one end or the other till you slice it all into thin strips about a 1/4 of a cup set a side. Chop your onions and tomatoes about 1 cup each and set them a side. Grate 1 cup of lowfat cheese your choice set it aside. I like colby jack myself. It is important to have all your ingredients ready before you start so everything can be put on right away. Take about 1/4 cup of your egg beaters and pour into your skillet. Let it cook till you see it start to set up. First sprinkle in the salmon on 1/2 the omelette. Then proceed to add a pinch of fresh basil followed by tomatoes and onions( I like using green bunching onions) and then cheese. I use alittle less than a 1/4 cup of these. Fold omlette over and sprinkle some cheese,basil and tomatoe. Pepper to taste. Let cook till the cheese starts to melt. Enjoy. This is one of my familys favorite breakfast meals and yes it took them tasting it to believe it!
