Ingredients

    1/2 tsp Fennel Seed
    1 tsp Crushed Basil Leaves
    1 tsp Minced Garlic
    1 tsp Crushed Rosemary Leaves
    1/2 tsp Oregano Leaves
    1/2 tsp Ground Black Pepper
    Pam Non Stick Coating - to cook chicken and onion in
    1 lb Boneless Skinless Chicken Breast cubed
    1 Med Sweet onion Chopped
    1 can Cannellini or Navy White Beans
    1 can Diced Tomatoes undrained
    1/4 c Red Wine
    1 tsp Salt
    1 Pkg Baby Spinach Leaves 10oz

Directions

HEAT: pan sprayed with Pam on med high heat. Add chicken, cook till browned and cooked through. Add onion and fennel seed, cook and stir on med heat 5 min or until tender.
STIR: in beans, tomatoes, red wine, remaining spices and salt, cover and simmer 5 minutes. Return chicken to skillet.
STIR: in spinach, cover until spinach is wilted.
SERVE
