Ingredients

10 oz. frozen spinach
1/3 c. all-purpose flour
1/3 c. whole wheat flour
1/3 c. oat bran
1/2 tsp. salt
2 eggs, beaten lightly
1/2 c. water, or spinach juice
1 med. onion chopped
8 oz. cheddar cheese, grated
1 tsp. olive oil, for baking pan
Directions
Makes 8 wedges, 10 inch pie dish.
Preheat oven to 375 degrees
Thaw spinach in microwave. Drain, reserving 1/2 c. liquid. Allow to cool while preparing other ingredients.
Stir all remaining ingr. together, reserving oil to coat baking dish.
Add spinach and liquid to other ingredients, mix well.
Lightly pile into 10 inch pie dish, or other baking dish desired.
Bake at 375 degrees 30 min.
Turn temp. down to 325 degrees 30 min.
turn temp. sown to 300 degrees for the final 20 min.
Allow to set for 10 min. before cutting.
