Introduction
Low carb and gluten-free pancakes. These are not exactly like "normal" pancakes, but are great when on a low carb diet. They are even better with blueberries mixed in or fruit on top. Ingredients

1/2 cup flax meal
1/2 cup almond meal
1/4 cup heavy whipping cream
1 tblspn ricotta or cottage cheese (whipped in food processor)
1/4 tspn baking powder
2 eggs
2 teaspoons coconut oil
1/2 scoop Jay Robb Vanilla Whey Protein (or any flavor)
Directions
Whip cottage cheese in a food processor until smooth. Mix all other ingredients and stir in cottage cheese. Drop onto hot griddle. I spray butter-flavor Pam on a non-stick griddle. These do not really bubble up like normal pancakes, so you need to keep an eye on how brown they are getting on the bottom. This made six pancakes for me and I ate 3 per serving.
