    2 med potatoes
    bunch fresh spinach (you can use frozen)
    med onion chopped
    2 cloves garlic, crushed
    tsp veggie bouillon mixed into around 75-100 ml boiling water to make a stock
    tbsp fresh coriander (cilantro)
    tsp curry powder
    tsp each cumin and dried coriander


Saute onion and garlic in a tablespoon of the vegetable stock for 4-5 minutes until tender and most of the water has evaporated. Add the spices and stir in. Add the chopped potatoes, stir to cover in the spices, add the remaining stock and cook the potatoes for 15 minutes or until soft and tender. Add the chopped spinach and cook for 3-4 minutes. Stir in chopped fresh coriander (cilantro) at the end. Optional: stir in a spoonful of plain yogurt or creme fraiche if liked (not included on nutritional values).
