Introduction

Ingredients

    Sandwich thins
    Part Skim ricotta cheese
    Canned diced tomatoes
    Fresh baby spinach
    Deli style provolone slices
    portobello mushrooms
    spices (optional)
    Parmesan cheese (optional)

Directions

Blend the ricotta and tomatoes together in the blender, add some parsley or spices if you like, or add a tiny bit of basalmic vinegar if you like some tang to the sauce. Spread that mixture on the two halves of the sandwich thins. Then loosely cover the halves with baby spinach. Now add a slice of deli provolone on each half. Now chop up some slices of portobello mushrooms, add them on top. Now bake in the toaster oven @ 400 degrees for about 8 minutes. Broil setting for a few more mins. and you have home made healthy pizzas. Top w/ freshly grated Parmesan cheese.

Makes 2 mini pizzas.
