Number of Servings: 8

Ingredients

    5 cups lowfat organic chicken stock
    1 cup short grain or med grain rice
    2 cups carrots diced
    2 cup chopped celery
    One whole onion diced
    Zest and juice of one organic meyer lemon
    2 cups chopped white meat chicken( I use rotissere chicken)
    1 tbls chopped garlic
    seasoning to taste( I use a little salt fresh pepper and season de province)
    1 tbls olive oil
    one can lowfat 'cream of chicken' soup

Directions

saute vegitables and garlic in olive oil until soft.
Add all ingredients and simmer for about two hours or until rice is cooked through.
Makes 8-10 one cup servings
