Introduction

This bacon-y pasta dish is vegetarian, and delicious! Instead of bacon, fry tofu with onions, a bit of olive oil, and bacon salt to make faux bacon.

This recipe does not take pasta-cooking time into account, as I keep cooked pasta in my fridge for quick meals!

Ingredients

    Ronzoni, Whole Wheat Penne Rigate, 8 oz, cooked
    Tofu, extra firm, .5 block
    BaconSalt, 2 tsp
    Onions, raw, .25 cup, chopped
    Garlic, 1 clove
    Olive Oil, 2 tbsp
    Parmesan Cheese, grated, 6 tbsp
    Oikos Organic Greek Yogurt, Plain, 3 oz

Directions

Prepare pasta if needed, according to package instructions.

Heat a large skillet on medium to medium high. When skillet is hot, add one Tablespoon of olive oil. Reserve 1 Tbsp of oil for later.

When oil is heated, add chopped onion, garlic and crumbled tofu. Sprinkle 2 tsp of BaconSalt over ingredients and stir-fry for 7-10 minutes, or until onion is clear and tofu is browned. Taste a bit of tofu to make sure it is bacon-y enough. Adjust BaconSalt to taste.

Add cooked pasta, 1 Tbsp of olive oil, and Greek yogurt. Stir fry for 5 minutes, or until pasta is heated through. If a creamier sauce is desired, add additional yogurt.

Top with parmesan cheese and serve.

Makes 8 servings.
