Ingredients

8 large eggs
1 cup heavy cream
1/4 tsp Kosher salt
1/8 tsp freshly ground black pepper
1/8 tsp white pepper
1 pinch ground nutmeg
1 cup shredded cheddar cheese
1 cup shredded Swish cheese
1 cup coarsely crumbled cooked bacon
1 cup leftover low carb vegetables
2 tbsp chopped green onion (optional)
Directions
1. Preheat oven to 350. Spray 8" glass pie pan with PAM
2. Mix eggs, cream, salt, pepper, & nutmeg in a bowl, then pour mixture into pie pan
3. Sprinkle cheese, bacon (if using) and veggies over the top, then push them down into the egg mixture using your hands or the back of a spoon, spreading the fillings evenly
4. Bake 40 minutes, or until the quiche turns golden brown and a toothpick stuck in the centre comes out clean. Let the quiche rest 15 minutes before serving.
