Number of Servings: 6

Ingredients

    1.5 lbs of peeled and deveined shrimp (I use Key West Shrimp, they're a slightly smaller shrimp)
    1/2 a medium red onion, chopped
    2 tbsp minced garlic
    1/2 cup of Salsa verde

Directions

Spray large skillet w/ cooking spray or olive oil.
Add chopped onion and garlic and heat over medium high heat for several minutes (until slightly browned).
Add in salsa and shrimp. Cook until shrimp are pink and firm.
Serving size approx. one cup.
You can serve immediately in tortillas or w/ side of black beans. Tastes even better cold over salads.
