Introduction

Loaded with antioxidants, I adapted a recipe I found in the newspaper to make it vegan. This is a Unique chili, the cherries provide little pops of sweetness that complements the chili seasonings. I had to substitute one can of Chipotle Pepper Fire Roasted Diced tomatoes once, the Chipotle flavor melded nicely with the cherries! This is an UNBELIEVABLY unique chili! I also used some Penzey's Turkish Seasoning when I found no coriander or oregano in my pantry. Worked great! The original recipe I adapted called for ground turkey and low-sodium chicken broth, those were the only changes necessary to veganize it. Ingredients

    2 cups Imagine Organic No-Chicken Broth
    1 package Morningstar Farms Meal Starters Crumbles
    2 cans fire-roasted tomatoes (tomatoes with Chipotle pepper add awesome flavor!)
    1 can of black beans, drained and rinsed lightly
    3/4 cup dried cherries
    1 tbl. olive oil
    3 garlic cloves, chopped
    1 whole fresh jalapeno, seeded and diced
    1 red bell pepper
    1-2 tbl. chili powder (to taste)
    1 1/2 tsp. ground cumin
    1 tsp. dry mustard
    1/2 tsp. oregano
    1/4 c. chopped cilantro

Directions

Heat one cup of broth, add cherries and set aside. Heat olive oil in large pot, add garlic and saute lightly. Add peppers and rest of seasonings except cilantro, saute lightly. Add the Crumbles, tomatoes and reserved broth, bring to a boil. Add black beans, cherry mixture and cilantro, stir well and bring to a boil, reduce heat and simmer 10 minutes. Serves 6-8.
