Ingredients

    1 tbls Extra Virgin Olive Oil
    3 whole Leeks, halved and thinly sliced
    12 oz Fresh Mushrooms, sliced
    1 1/2 tsp Garlic, chopped
    10oz bag Fresh Spinach
    2 fl oz White Wine
    1/4 tsp Kosher Salt
    1/4 tsp Black Pepper, ground

Directions

* Pour olive oil into pan and heat over med-high heat.
* Add the leeks and sweat them until almost translucent.
* Add the mushrooms and the garlic and continue to sweat till mushrooms are cooked. Be careful not to burn the garlic.
* Add the spinach and white wine and wilt .
* Season with salt and pepper.

Makes 6 servings.

    Incredible!
    This was absolutely delicious! It would be even better with bacon, and sundried tomatoes. Although not nearly as healthy! So maybe just onion and sundried tomatoes! Good recipe honey! - 2/24/11
