Introduction
Protein and fiber meet in this great veggie burger to make a filling and wholesome dinner. It's pretty bright too!Protein and fiber meet in this great veggie burger to make a filling and wholesome dinner. It's pretty bright too!

Ingredients

2 c navy beans, cooked and separated
1 c sweet potato, baked
1/2 c oatmeal (not cooked)
Directions
Mash potato and 1 cup of the beans into a smooth consistency.
Mash remaining beans into chunky consistency.
Mix beans, potato and oatmeal in bowl. Let rest about 10 minutes in fridge.
Make into 6 patties.
Spray frying pan with cooking spray and cook patties, flipping half way through, for about 10 minutes or until crispy on the outside.
OR
Bake at 375 for 30 minutes, flipping halfway. This makes it less "blackened", but they are crispier throughout.
Optional: Add a your choice of hot pepper to the blender for a little kick to balance the sweet.
Also, black beans are GREAT with sweet potatoes if you don't want to use navy beans.
Top it with salsa or dress it as a burger (I recommend pepper jack cheese!) ... it's a pretty diverse dish!
