Introduction

Easy, simple and delicious! Serve over rice, with tortillas or tortilla chips. Top with lite sour cream and shredded cheese (not included in calorie count). Add hot sauce as desired. Ingredients

    3 large frozen chicken breasts
    1 can black beans drained
    1 can yellow corn drained
    1 can diced tomatoes
    1 can cream of chicken soup
    1 cup salsa
    1 Tbsp taco seasoning
    1 tsp cumin

Directions

Place frozen chicken breasts on bottom of slow cooker. Add black beans, corn and diced tomatoes. Mix cream of chicken, salsa, taco seasoning and cumin and dump over the top. Mix it up a bit with the beans and corn. Cook on high for 4-5 hours until chicken shreds easily. You can also cook on low for 8-9 hrs. Shred chicken and mix everything together.

Makes 6 one cup servings.

I serve it over brown rice (not included in calorie count).
Top with hot sauce, sour cream and shredded cheese (opt).

    Good recipe for someone like me who works long hours. The only change I would make has to do with my lactose intolerance. . . chicken broth instead of cream of chicken soup. Thanks. - 2/26/11
