Introduction

My roommate found some variation on this recipe and I got to thinking I could improve on it's healthfulness...I made it a strata instead of a pie so you don't have to make the nilla wafers into a crust (and add a lot of butter) My roommate found some variation on this recipe and I got to thinking I could improve on it's healthfulness...I made it a strata instead of a pie so you don't have to make the nilla wafers into a crust (and add a lot of butter)

Ingredients

    Jello Sugar Free Fat Free Banana Cream Pudding - 2 packages

    Milk, nonfat (make per the package instructions - should be 2 3/4 C milk)

    Reduced Fat Nilla Wafers - about 24, crushed coarsely

    Bananas, 3 medium - sliced

    *Dole Pineapple Tidbits 100% Pineapple juice, 1 can, drained

    *Cool Whip Lite, 1 cup

Directions

1. Make the pudding (mix milk and pudding, let set in fridge for 5-10 minutes)
2. Lay a layer of Nilla wafers in a square glass pan.
3. Put a layer of pudding (1/2 the pudding) on top of cookies.
4. Put a layer of banana slices and pineapples on top of pudding.
5. Repeat layers, retaining a little Nilla wafer for the top.
6. Spread cool whip on top, and sprinkle Nillas over that.
7. Chill at least 1 hour.

Makes 10 - 1/2 Cup servings
