Introduction

Ingredients

    1 tbsp Olive Oil
    1 Onion, peeled and chopped
    2 cloves garlic
    1/2 tsp cumin, ground
    3/4 tsp sea salt
    3 tbsp curry powder
    3 tbsp whole wheat flour (or spelt, brown rice, etc)
    3 cups Vegetable stock (we used our homemade)
    2 cups coconut milk
    3 large tomatoes, diced

Directions

Heat the oil in a saucepan over medium heat. Add the onion and garlic. Cook for 5 minutes or until soft.

Add the spices and cook for 1 minute. Add the flour and cook for another minute.

Stir in the stock gradually to prevent lumps forming.

Add the coconut and tomatoes, stirring occasionally.

Simmer for half and hour.
