Ingredients

    1 lb sole
    1 tsp chili powder
    1 T olive oil
    1 T butter
    2 cans chickpeas, drained and rinsed
    2 16-oz bags of frozen chopped greens (I used spinach and mustard greens)
    Juice of 1 lemon
    1/4 tsp salt
    pepper to taste

Directions

Serves 4

Rub sole with chili powder.

In a skillet, over medium heat, heat butter and oil. Add sole. Saute 1 minute. Flip fillets. Saute 1 more minute or until flaky. Stir in the remaining ingredients and heat through.
