Introduction

This is really good, you can make it very spicy with hot salsa, or milder, whichever you prefer. I use Santa Fe salsa, so there are not large vegetable chunks. Ingredients

    4 boneless skinless chicken breasts
    1 onion, chopped
    3 garlic cloves, or garlic powder to taste
    1 1/4 cup chicken broth
    1 cup salsa
    1 cup rice uncooked
    shredded cheese

Directions

Cut chicken up into bite size chunks. Sautee in oil until cooked through. Add onion and garlic to pan, and sautee until onions are clear. Add chicken broth to pan, and bring to a boil. Add rice, cover and simmer until rice is almost done. Add salsa to pan, mix and let simmer about 15 minutes or until most of the liquid is cooked out. Add shredded cheese, and mix in. Let cheese melt and serve.
