Introduction

Number of Servings: 8

Ingredients

    6 cups Butternut Squash (cubed)
    1 medium Yellow Onion (chopped)
    4 cups Fat Free Chicken Broth (3 standard cans)
    4 TBSP Unsalted Butter (half stick)
    1 tsp Nutmeg


Directions

Halve butternut squash and scoop out seeds, peel, and cube.
Chop onion and sauté in butter until clear.
Add chicken broth and butternut squash.
Boil on medium heat until squash is tender (about 20 minutes).
Allow mixture to cool for safe handling.
Puree in blender. You will have to do this in batches, as most blenders will not handle the entire pot.
Put pureed soup back in the pot.
Add nutmeg.
Simmer until the soup reaches the desired thickness.

Serves 8 (1 cup)
