Introduction

Recipe courtesy of Emeril Lagasse. Fresh Food Fast
Emeril uses smoked salmon which I love but, it has a high sodium content so I used salmon that I had poached. I also reduced the amount of salt when calculating this recipe and added capers. I also used .5 tablespoons of Honey instead of sugar when calculating this recipe.

Arrange the cucumber ribbons on four salad plates. If using, tuck slices of salmon in among the ribbons, or drape them loosely over all. Sprinkle capers over salmon. Serve immediately.
