Introduction

This is a very basic tuna salad recipe that I learned while working in the industrial cafeteria at my university's student union. I always loved their tuna salad and found out that the secret is lemon juice (about 1 tbsp... I put 2 fl. oz.'s in the ingredients, but didn't know how to translate that it's really about 1 tbsp or less) and a dash of pepper (season to taste). It's not really going to re-create tuna salad, but if your's seems to be missing something this recipe is worth a try! Ingredients

    1 can of tuna, in water
    1/4 cup kosher dill pickles, chopped (slices or spears will work)
    1 large hard boiled egg, chopped
    2-3 stalks celery, chopped
    2-3 Tbsp (depending on your taste) of Light Miracle Whip
    1 Tbsp (or less) Lemon juice
    Pepper to taste

Directions

Chop the pickles, eggs, and celery. Set aside. Open and drain the can of tuna so that most of the water is gone. Add the chopped pickles, eggs, and celery, miracle whip, and lemon juice. Stir to combine all ingredients. Sprinkle pepper over tuna salad to liking (I like a light dusting across the top), and stir again to blend. Serve alone or with bread (nutrition info for this recipe does not include bread).
