Ingredients

    1 lb. boneless, skinless chicken breasts, cubed
    1 tbsp. canola oil
    3/4 cup chopped onion
    3 cloves garlic, minced
    1 tsp. ground cumin
    2 cups low-fat chicken broth
    1 cup chunky salsa
    1 can white beans, rinsed and drained
    1 cup corn kernals

Directions

Saute chicken in canola oil until cooked through. Add onion, garlic, and cumin, and cook until onion is tender. Add broth, salsa, beans and corn. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.
