Introduction
These scones are delicious- only as an once a month treat like when I return from my twice-weekly 5 mile walk. Don't over knead the dough and they will be light and satisfy your sweet craving. Ingredients
-
In a small bowl mix
1/4 cup buttermilk
1/4 cup whipping cream
1 tsp almond extract
1 tsp vanilla extract
1 egg.
In food processor mix
2 cup white flour (I like white protein flour)
1/2 cup sugar
2 tsp baking powder.
3/4 cup chilled butter
1/4 white or dark chocolate chips
1/3 cup dried craisins
1 Tbsp cream
1/2 tsp almond extract
1 Tbsp sugar
Directions
Mix the wet ingredients in a small bowl. Mix the flour, sugar, baking powder in a food processor, add the butter, pulse until almost grainy. Add the mixed liquids (milk, cream, and egg, and extracts). Pulse a couple times- do not allow to come into a ball. Pour the crumbly mixture out onto a silicone mat (or wax paper). Add craisins and white chocolate chips. Knead about three times, form into a circle about one inch thick. Cut into 8 (388 cal each) or 12 (258 cal each) . Move carefully (with spatula) to a baking stone. Optional: Top with a tablespoon of cream mixed with egg substitute and a drop of almond extract. Sprinkle with sugar.
Cook 15-19 minutes depending on size of scone. Makes 8-12 three to four inch scones.
