Introduction

This is a soup that I had demonstrated for me a while ago and I decided to recreate it for everyone to try. This is a soup that I had demonstrated for me a while ago and I decided to recreate it for everyone to try.
Number of Servings: 10

Ingredients

    1 head cauliflower, chopped into 1 inch pieces
    3 Cups reduced sodium beef broth (I used No name)
    3 Cups water
    2 tablespoons Curry Powder
    1 tablespoon butter (I only had salted in the house, unsalted will work great and reduce the sodium too!)
    3 cloves garlic, minced
    Salt & White Pepper to taste

Directions

Melt butter in a large soup pot. Soften garlic in butter, but do not let it brown (this should only take 45 sec - 1 min). Add cauliflower, beef broth and water. Bring to a boil. Add the curry powder and continue to boil for 10 minutes. Reduce to a simmer for 45 minutes, stirring occasionally. Carefully ladle soup into a blender and purrée in batches. Return purréed soup to pot and bring back to a boil. Serve hot.

Variations:

You can also soften some yellow onion along with the garlic, or add or reduce curry powder if you like it hotter/milder.
