Introduction

Number of Servings: 6

Ingredients

    5 Tbsp Mayo (reduced fat w/olive oil)
    1/2 Tbsp Balsamic Vinegar
    1/4 cup loosely packed fresh parsley leaves
    1/4 of a small onion (about 1.5 oz)
    1/4 head of red cabbage, cored
    1/4 head of green cabbage, cored
    1 carrot

Directions

Mince parsely in food processor with metal blade. Add onion and process until minced. Add mayo and balsamic and pulse until mixed. Put on shredding blade and shred carrot. Put on slicing blade and slice both cabbages. Dump everything in a big bowl and toss using tongs. Refrigerate at least 24 hours or the onion will be overpowering.

Makes about 6 cups.
