Ingredients

2 cups brown rice (cooked)
1 lb 94% lean turkey
2 medium tomatoes
2 servings Chef Meg's Taco Seasoning
1 medium onion
1/2 cup mozzarella cheese
Directions
1. Cook rice according to package directions. (If you use a big pot, you can mix other ingredients in once everything else is cooked.
2. During last 15 minutes of rice cooking time, pour olive oil into a pan to cook the turkey. Heat pan and cook turkey over medium heat. Add 1/2 of Chef Meg Taco Seasoning (ingredients: 3 t chili powder, 1 t ground cumin & 1 t red pepper flakes). Drain any excess fat.
3. Add turkey to rice once it is cooked and mix together.
4. Chop onion finely and use a blender to mostly puree the tomatoes & fresh cilantro. You want some chunks of tomato but mostly you are making a sauce out of the tomatoes. Add the remaining seasoning to this mixture and blend.
5. Pour tomato mixture over the rice and turkey. Heat on medium heat for about 10 minutes.
6. Sprinkle cheese on plates.
